The Art Of Slow Cooking

So, you know anytime a new gadget or something comes on the market that will send me to the kitchen, my husband knows I am going to get it. I do have a few favorite gadgets, though – like my slow cooker, which is great to have dinner ready if we are going to be gone for the day, and food processor. These things I just cannot do without when it comes to easy, fast preparation and great meals.
The first slow cooker, and originally known as the crock-pot, has been around since the early 1970’s. By 1991, the slow cooker had generated over $30 billion in sales. Believe it or not, I still have the original one my mother bought back then. It has participated in many Sunday roast dinners with all the trimmings. Slow cooking rendered the toughest cuts of meat to falling-off-the-bone-tender and added the flavor of the vegetables to the juices in the pot. The slow cookers weren’t very attractive back then, and have evolved over the years. My mother’s famous chicken and dumplings were cooked in that old slow cooker and that is the dish she took to every church dinner at the request of everyone!
We have since upgraded to a larger slow cooker with lid locks and handles. My husband’s favorite slow cooked dinner is roast with potatoes, carrots and gravy. Mine is a chicken dish. In the morning, I put two skinless chicken breasts in the slow cooker, add a cup of rice, water for cooking (water amount depends on what type of rice you use – white, brown or basmati – our favorite), and add a jar of Seeds of Change Tikka Masala curry sauce on top, cook all day and it is ready by the time we get home from work. The chicken and the rice absorb all the flavors and it is yummy! Serve with a tossed salad and you have a complete healthy and delicious meal!
I couldn’t begin to tell you how my mother made her chicken and dumplings. We could never duplicate that recipe. She just had that special loving touch and evidently, a secret to her incredible dumplings. The great thing about a slow cooker is that you can cook just about anything from meat dishes, to pasta dishes, dessert and bread. It also saves on the electric bill and in the summer keeps the kitchen from heating up since you don’t have to turn on the oven for a few hours to cook. And believe me, living in a hot, humid climate like we do, that is worth it in itself!

That question would be easy to answer even if all you’ve ever done is make chicken stew with your slow cooker. It’s just too easy and the food tastes exceptional when cooked slowly and evenly in a crock pot.

Country-Style Crock Pot Chicken
6 carrots, sliced
6 celery stalks, sliced
8 chicken pieces
1 can (10-3/4 oz) cream of chicken soup, undiluted
1 envelope dry onion soup mix
1/3 c or chicken broth
2 tsp cornstarch
Slice vegetables place in crock pot. Place chicken on vegetables. Spread undiluted soup over chicken. Sprinkle dry onion soup mix. Do not add any water. Cook on High 4 hours, or until chicken is done. Stir often. 10 minutes before serving, mix broth and cornstarch. Pour over chicken, stir well. Serves 4.

CHOOSE YOUR CUT OF MEAT
The very first step to cooking a pot roast is to choose a cut of meat. There are several cuts of meat that will work for pot roast, but some are better than others. I recommend that you visit your local butcher and ask him or her to recommend a good piece of meat for your pot roast. If however, there is no butcher shop close by, visit your local supermarket. Most supermarkets will put helpful labels on the meat telling you what that cut of meat is generally used for. Common cuts of meat used for pot roast are Chuck, Brisket, Top Round and Bottom Round. Most people prefer chuck as the meat of choice, but I find it a bit too fatty and prefer to use Bottom Round. Experiment with different cuts to find the one you like best. For the purpose of this recipe, choose a cut of meat that is 3 - 5 Pounds.
THE VEGETABLES
I like to use a variety of different vegetables when I make this dish. It makes it more interesting than the usual carrots, celery and onions that many recipes call for. The best vegetables to accompany pot roast in my opinion are carrots, celery, onions, garlic, potatoes, turnips and rutabaga. You are free to use all of these or just a few. The choice is yours and nothing is written in stone. I just love the different textures and flavors that these different vegetables provide. Here are the measurement estimates for the veggies I like to use. Use more or less depending on how big your crock pot or slow cooker is. You don’t want to overcrowd the crock pot.
1/2 Cup of Chopped Turnip
1/2 Cup of Chopped Rutabaga
1/2 Cup of Chopped Onion
1/2 Cup of Chopped Carrot
1/2 Cup of Chopped Celery (Look for celery with celery leaves still attached. The leaves impart an excellent flavor to the broth)
3 Garlic Cloves Minced
THE COOKING LIQUID
People use a variety of liquids to braise a pot roast and add their own unique flavors to this dish. People use a combination of water, beef stock, red wine (choose a wine that you would drink, not a cooking wine) and even beer. I like to use simple water mixed with beef stock. I usually use one part water to one part beef stock and use enough to where the roast is only submerged half way.
LET’S GET COOKING
Ok, we are ready to start cooking this beautiful dish.
Step 1
Season the meat with salt and pepper to taste. In a large skillet over medium heat, brown the meat on all sides, in a tablespoon of vegetable oil.
Step 2
Place your chopped vegetables in the bottom of your slow cooker. Place the meat on top of the vegetables and then pour your liquid over the top.
Step 3
Cover the slow cooker and cook at the lowest setting possible for roughly 8-10 hours. Meat should easily fall apart when pierced with a fork and vegetables should be soft. Remove meat and vegetables and place on a serving platter.
Step 4
Now to make the gravy. Whisk together, in a sauce pan, 1/4 cup of cold water and 2 tablespoons of flour until smooth. Slowly incorporate 1 cup of the hot broth from the pot roast and bring to a simmer stirring constantly until thickened.

Who wants to work all day and then come home and spend an hour or two preparing dinner? Not me! Though slow cookers will save you a lot of time, there are a few tips I can give you that can help you use your slow cooker more effectively.
The first thing that you can do to save time is prepare your foods the night before and refrigerate them. This will save you time in the morning because you only need to place your ingredients in the slow cooker and you are done! Some foods such as rice and pasta you will not be able to prepare ahead of time but most foods can be. Just do as much as you can. After all, you have enough to do in the morning with getting ready for work, breakfast, the kids and so on.
Being that the majority of popular slow cookers only have two settings of low and high, I have found that cooking on the lowest setting gives me the best results. A common problem with slow cookers is that they cook too hot and if you use the high setting, you have a good chance of overcooking your meal. I have never overcooked any food by using the low setting. Programmable crock pots are also an excellent idea because they make it literally impossible to cook something incorrectly because you can set and forget.
Many slow cooker recipes call for vegetables and if you are going to use fresh ones, you will want to plave these under the meat as they will take longer too cook. Canned vegetables cook fast and should be placed over the meat. Also, it is a good idea to thaw out the meat before placing it in the crock pot. Some people will put a frozen roast in a slow cooker but I have found that my roasts have cooked better when they are thawed out first.
I hope that these small suggestions will help you utilize your slow cooker better and save you time. You will find that as you use your slow cooker more and gain experience, you will develop your own habits and find other ways to save time.

Container Gardening Ideas For The Many Different Garden Pots

Here are some container gardening ideas. In addition to traditional circular pots and tubs, there are modern and ultra-modern forms—square, rectangular, triangular, hexagonal, and octagonal. Also eligible are old iron kitchen pots, kettles, pails, jugs, casks, vases, crocks, jelly tubs, barrels and nail kegs, Japanese fish tubs, old sinks, bathtubs, bamboo soy tubs. There are novelty containers such as driftwood, wheelbarrows, donkey carts, spinning wheels and boxes attached to roadside mail receptacle. There are also bird cages, decorative well heads, animal figures, and Strawberry jars. Woven baskets may be used to conceal unattractive containers. Even tar paper pots, handled by garden centers and florists, are worthwhile if painted or covered to improve their appearance. Any of these can be used in your container gardening ideas.
Where to find your container supplies? Start with what you have. If you scout cellars or basements, attics, garages, and sheds, you will doubtless encounter something interesting. Old-fashioned pots and kettles, often sold in antique shops at country auctions or seen at old New England inns, have much appeal.
Other container garden ideas are to consider old cookie and bean jars, pickle and other types of crocks, wash tubs, coal pails, jardinières, and ceramic bowls. For drainage, spread a thick layer of large pebbles or broken pieces of pots or bricks at the bottom and then water plants with care. In large containers of this kind, drainage material should be several inches thick. Where rainfall is heavy, be sure to keep garden containers without drainage outlets on porches, under awnings or the broad eaves of houses. With pails and old galvanized wash tubs, holes can be easily punctured at the bottom.
Plants in containers without drainage openings remain moist longer. Some of these—crocks, jardinières and cookie jars—are heavy enough to be secure against wind in outside container gardening.
What constitutes the ideal container for your container garden ideas? A container must be attractive, even if it is not an object of art. It should be strong and durable and able to resist all kinds of weather. This is especially true of the large sizes, which usually remain outdoors all year around. In the North, alternate freezing and thawing is a problem in winter (and could cause cracking); in tropical climates, excessive heat, humidity, and moisture are to be considered (and could cause fading). And in semiarid areas, there is the effect of scorching sun to keep in mind, another cause of fading. All these things must be kept in mind when coming up with your container gardening design.
The ideal container must be large enough to hold a substantial amount of soil. It should have good drainage facilities through holes or other openings at the bottom or sides, though this is not absolutely necessary. It must not rust, at least in a single season, and it should have a wide enough base to rest firmly wherever placed. Besides, it ought to be heavy enough to withstand average winds. In severe storms, like hurricanes and tornadoes, movable containers can be shifted to temporary safety. All of these things should be factored in when you are coming up with your container gardening ideas.
Resistance to rot is another requirement. Wooden containers—except those made of rot-resistant redwood, Western cedar, and Southern red cypress—will need to be treated with a wood preservative. Except for permanent containers, the ability to move your container garden is another feature, and sometimes a safety precaution, of portable container gardening. Large boxes and planters can be fitted with wheels, and garden centers have redwood tubs that rest on platforms with wheels. A hole in the platform corresponds to the hole in the tub. Large containers without wheels can be pushed on iron or wooden rollers by two or more persons; however, if you live in an area prone to disastrous storms it is best to keep your containers small.

Simplest Pot Roast Ever

Pot roasts are inexpensive cuts beef legs or beef shoulder that when slow cooked with fresh vegetables turns into a delightful home cooked meal. For many cooks who have never tried cooking a pot roast they may feel a bit intimidated at first. But in reality pot roasts are easy and make for a wonderful nutritious home cooked meal.
Because the leg and shoulder cuts are well marbled with fat when slow cooked the meat becomes fork tender. A trick to the perfect pot roast is to cook the meat with a moist method. To do this combine the meat and vegetables in a slow cooker or crock pot with enough broth to cover at least half the roast. Then slowly cook for 4-5 hours or until the meat is tender and tasty.
Below is a recipe for the simplest pot roast ever.
Combine in a slow cooker or crock-pot all ingredients.
1 rump roast or chuck roast
1 bay leaf
1 onion, sliced in large chunks
1 large carrot, sliced in large chunks
1 tsp pepper
1 tsp of salt
Broth to cover half way up the roast
Cook on low for 4-5 hours or until the meat is fork tender. You can serve this with baked potatoes and a fresh green salad.
