Slow Cooker Recipes - Volume 3

Hot Chocolate
Ingredients:
3 cups of dry milk powder
1 cup of powdered sugar
3/4 cup of cocoa powder
1/4 tsp salt
2 tsp vanilla
1/2 cup of chocolate syrup
1/2 cup of powdered creamer (nondairy)
7 cups of water
Marshmallows and candy canes
Directions:
In a slow cooker, mix together the dry milk powder, powdered sugar, cocoa powder, salt, vanilla, chocolate syrup, and creamer. Stir well with while gradually adding the water. Put the lid on the slow cooker and set to a low heat. Cook for a total of four hours, stirring once after the first two hours. Stir well just before serving, then pour into mugs with marshmallows and candy canes for stirring.
Mulled Apple Cider
Ingredients:
1/2 cup of light brown sugar
2 quarts of apple cider
1 tsp whole allspice
1 1/2 tsp whole cloves
3 whole cinnamon sticks
2 large oranges (sliced)
Directions:
Put the apple cider, brown sugar, cinnamon sticks, allspice, cloves, and oranges into the slow cooker. Stir well until the brown sugar has dissolved. Cover the crock pot and cook on a low heat setting for about three or four hours. Be sure to strain the spices before serving.
Spiced Cherry Cider
Ingredients:
3 1/2 quarts of apple cider
2 cinnamon sticks
2 (3-oz) packages of cherry-flavored gelatin
Directions:
Pour the apple cider into the slow cooker. Add the cinnamons sticks and cover. Set to a high heat and cook for three hours. Stir the mixture while adding the cherry gelatin. Cook for another hour so the gelatin can dissolve. Keep the cider warm on a low heat and stir well before serving.
Warmed Fruit Punch
Ingredients:
8 cups of water
1 (6-oz) can of frozen lemonade concentrate (thawed)
1 (12-oz) can of frozen cranberry-raspberry juice concentrate (thawed)
1/2 cup of sugar
1/4 tsp whole allspice
4 cinnamon sticks
1/4 tsp whole cloves
Directions:
Pour the water, thawed lemonade and cranberry raspberry juices, sugar, allspice, cinnamon sticks, and cloves into the slow cooker. If you like, you can put the spices into a cheesecloth before placing it in the slow cooker, otherwise you will need to strain the spices before serving. Cover the slow cooker and cook on a high heat for three hours. Reduce the heat to a low setting. Remove the spices if they weren’t bound in cheesecloth. Keep warm and serve directly from the slow cooker.
Wassail
Ingredients:
6 cups of apple juice
6 cups of cranberry juice
6 cups of orange juice
6 cups of lemonade
1 cup of brown sugar
2 cups of water
4 cinnamon sticks
1 orange (sliced)
1 tsp whole cloves
1 tbsp Angostura bitters
2 cups rum extract
Directions:
Pour the apple juice, orange juice, lemonade, cranberry juice, water, cinnamon sticks, orange slices, sugar, cloves, and Angostura bitters into the slow cooker. Set to a low heat setting and cook for about seven hours. Add the rum extract just before serving. Remove the cloves, orange slices, and cinnamon sticks before serving.

Select a clean pot several inches wider than the broadest basal width of a terrestrial orchid. Soak it for a few minutes in tepid water, then drain. Place coarse gravel, small rocks, or crocks (bits of broken pots) in the bottom third of the pot.
Add several large handfuls of compost and shape to a cone, the top of which is on a level with the lower rim of the pot. Spread the roots of the terrestrial orchid carefully and evenly around the cone, and fill with additional compost. Firm the compost lightly to settle it - never pack it - and water thoroughly. Later, water sparingly until growth is established.
Some deciduous orchids, as Calanthe vestita, lose their roots. Push their pseudobulbs into the compost just far enough to hold them erect. Other terrestrials, those without pseudobulbs such as Oncidium cavendishianum, may have to be wired or staked to the top of the compost since their leaves would rot if covered.
The first time you attempt to pot a tree orchid in osmunda you will find yourself using the least desirable words in your vocabulary. There is a definite trick in handling osmunda. Old-time growers regarded potting as the most distasteful part of orchid culture.
It was once believed that osmunda had to be packed into pots with great pressure, using special sticks as levers. If, when you lifted an orchid by its foliage, the osmunda came free from the pot your education in orchid culture was considered highly dubious
POTTING EPIPHYTES IN OSMUNDA
It is now believed that such extreme measures are not advisable. As long as osmunda stays securely in place, holding its shape when knocked out of the pot, orchids will do satisfactorily. The trick in potting with osmunda is to handle it while it is slightly damp. It is pliable then and packs more easily. When it dries out it stiffens enough to firm itself in the pot.
Here is how you go about potting epiphytes. Take enough pieces of osmunda, sometimes called “orchid peat,” to fill several pots. Soak the osmunda overnight in a pail of water. The following morning leave the pieces in a cool, dry, shady place. In the evening when you come home they should be just right for potting. They will feel soft, pliable, and somewhat damp - not wet - to your touch.
Take a clean pot at least two inches wider in diameter than the base of the orchid, soak it in tepid water for a few moments, then dry it out a bit. Soaking is not always necessary, but it helps the osmunda slide down the clay sides of the pot. Set the pot on its base and add enough gravel or crocks to fill it one-third.
Take the orchid in your left hand, the base (rhizome) resting on top of your thumb and forefinger. Smooth the roots over the back of your hand. Select a piece of osmunda as nearly conical in shape as possible. Put it beneath the base of the orchid, touching the rhizome.
Spread the roots around it. With other pieces of osmunda - slightly less in length than two-thirds the depth of the pot - cover the roots. Work outward, in a circle, until the osmunda covering the roots is a little larger in diameter than the top of the pot. Squeeze the osmunda with both hands, pressing it into the pot with a sliding motion.
Further packing is accomplished by inserting the fingers of your left hand between the osmunda and the side of the pot. In the gap so formed slip another small piece of osmunda. Turn the pot slightly and repeat the process. Keep turning, squeezing, and adding osmunda until you have to exert some pressure; then stop.
Now you can pot your orchids knowing exactly how you should go about it.

Okay, without further adue…
Vegetarian Minestrone
1 medium onion, chopped
2 medium carrots, thinly sliced
2 stalks celery, cut into 1/2 inch pieces
1 red bell pepper, seeded, cut into 1/2 inch pieces
1 medium zucchini, scrubbed, sliced into 1/2 inch rounds
2 cloves garlic, minced
2 14 1/2 oz. can vegetable broth
1 28 oz. can crushed tomatoes
2 15 1/2 oz. cans kidney beans, drained
2 tsp. dried marjoram
1/4 tsp. coarsely ground black pepper
1 1/2 cups cooked rice
Add all ingredients except rice to crock pot. Cover and cook on low 8 to 10 hours (high 4 to 5 hours). Add cooked rice and stir to combine. Serves 8 guests. Then transform it into a seperate bowl (unless you have another pot to go into the crock pot) and get ready to make dessert….
Baked Apples
6 medium or large apples
4 tbs peanut butter
1 tbs cinnamon
First take out the core of the apples. Then combine the peanut butter and cinnamon together. Whipped peanut butter seems to work best. Fill the cores with the peanut butter and cinnamon mix and place the apples in the Crockpot on a low setting for about 4 hours. Once finished, the apples can be eaten whole or cut up in pieces.

Slooooow Cookin’ My Chicken

Chicken Marsala Recipe
Ingredients:
4 boneless, skinless chicken breasts
1/2 tsp salt
1/2 tsp pepper
1 tbsp olive oil
1/4 cup of flour
1/4 cup Chopped parsley
1/2 cup Marsala wine
1/2 cup sliced mushrooms
Directions:
Mix most of the flour with the salt and pepper and cover the chicken breast in this mixture. In a skillet brown the chicken breast on both sides and place in the Crockpot. Add the wine and mushrooms to the skillet and let heat for about 10 minutes, while tossing and stirring. Sprinkle the left over flour onto the chicken breast and pour the sauce over. Allow to cook on low for 6 hours. Use the parsley to garnish the finished chicken marsala.
Hawaiian Chicken in a Crockpot
Ingredients:
Hawaiian Marinade from Mrs. Lowry’s
1 med can of pineapple chunks (juice and all)
2-4 chicken breasts
Directions:
Marinade the chicken for a couple hours before cooking.
Fully cook the chicken in the oven or in a frying pan. Place all the ingredients into your crock pot on low for 4-6hrs. About 20 minutes before serving add 1-2tbs of flour and stir to thicken sauce.

After owning and operating a Cajun Seafood Restaurant and winning the best crawfish in Houston, I have noticed that many people and restaurants don’t know how to cook crawfish the proper way. That is why I wrote the three top mistakes people make when boiling up crawfish. Here we go
1) Not purging, cleaning and throwing away the dead crawfish
The quickest way to ruin a crawfish boil is to not clean or throw away the dead crawfish. No matter how well you season and cook the crawfish, you will never get rid of the gritty, sandy taste if you do not purge and clean them. While you are cleaning the crawfish, they must be sorted, pulling out the dead ones. If you cook the dead crawfish, the tail meat will be extra chewy or will just fall apart and has a very sour rotten taste.
2) Sprinkling the seasoning on the outside of the crawfish

Never add water to the crock-pot unless it specifically says to do so. Always allow cakes and breads to sit and cool for five to seven minutes before taking them out of the pan.
Vegetables like potatoes and carrots should be cut no larger than 1″ thick, and put in the bottom of the pot, since they require more time to cook. Crock-pot cooking can be delicious for both meals and desserts when some basic guidelines are followed.

Slow cookers are electrical cooking gadgets that keep a low temperature for long hours for unsupervised slow cooking. Slow cookers are also called crock pots. They are commonly placed on countertops. It is used to cook food requiring low heat and long cooking time.
A slow cooker is usually made of porcelain or ceramic enclosed in metal housing with heating element controlled by a thermostat. The pot cover is commonly transparent glass to see what’s cooking inside. The pot both serves as a container of the food to be cooked and also a source of heat. They come in many sizes, from ½ liter to 7 liters.
A common slow cooker operates at maximum heat of 190 to 200oF. The temperature while it cooks is below 212oF or 100oC, approximately 160oF on low temperature setting. A steady heat from 175 to 200oF is retained by the heating element.
As a general guide, a low setting is used for cheap cuts of mutton, venison, beef, lamb and other red meat. It softens the connective tissues and takes 10 to 12 hours.
Medium setting is used for red meats. High setting is more for pale meat like chicken. This setting cooks faster for about three to four hours with temperature a little higher than that of medium setting.
Auto cook makes food taste better than those cooked with temperature setting of low or medium according to some actual tests. The automatic cook setting initially cooks on high temperature then shifts to low and maintain that temperature continuously. Some slow cookers do not have this setting.
The keep-warm is sometimes referred to as hold setting. It prevents the food from getting cold while keeping its flavor and preventing it from drying out. The slow cooker automatically shifts to keep-warm when the cooking time is reached. It is useful when the crock pot is going to be unattended longer than the required cooking time.
The indicator light is a useful visual aid to know that the slow cooker is on and working.
Check the power cord if it has enough length to reach the power source. Using extension cord is dangerous because liquids might be spilt into it and possibly causes a fire. It is a good idea to purchase a crock pot with a removable liner for the simple reason that it is much easier to clean.
Cheaper cuts of meat when cooked for a short period can be difficult to chew because of its connective tissue and muscles. But then long boiling can dissolve the connective tissue making them dry and hard. Slow cooker’s long and slow cooking will make the tissue soft and the muscle easy to chew.
There are some disadvantages in slow cooking. Sometimes through the process the food loses significant nutrients and vitamins. Enzymes are quickly denaturized when heated at high temperature, giving them less time to act throughout the cooking time.
Vegetables also have a tendency to lose nutrients when its enzymes are not denatured rapidly, as slow cookers cook at heat considerably below the boiling point. Vitamins are retained well when vegetables are quickly cooked because its cells do not potentially lose acids.
Some beans contains toxin that can be eliminated by continually boiling for 10 minutes or longer. It is recommended to boil raw beans before cooking in slow cookers to prevent food poisoning.

Three Delightful Rump Roast Recipes

Baked Rump Roast
This is about the easiest recipe you will find for rump roast but it turns out very good. Simply use about a four pound rump roast with one can or packet of french onion soup and a few tablespoons of vinegar. After placing the roast in a pan, pour the vinegar on it and set it an a preheated 350 degree oven. After the roast has cooked for an hour, add the onion soup to the pan and place back in the oven for about three more hours.
Italian Rump Roast In The Crock Pot
This is a very unique and tasty recipe that is also easy to prepare. Add a couple cans of tomato sauce, Italian seasoning mix, and a large jar of spagehhti sauce to a three or four pound roast. Put everything in your crock pot and season with garlic salt. Now top the roast with about a half cup of chopped onions and cook for a bout seven hours on the low setting. Serve over rice or pasta.
Grilled Rump Roast
This is my personal favorite and if you are short on time, this will be your best bet. You will need a four or five pound roast, a packet of onion soup mix, and a quarter cup of both mustard and water. The first thing you will need to do is brush the mustard on to the meat. Then you will drizzle the onion soup mix on the roast and then roll the meat in aluminum foil. Now simply grill the roast for about two hours over medium heat and you are ready to serve.
All three of these recipes are delicious and easy to prepare. You will just need to decide which one suits your taste.

Here are some container gardening ideas. In addition to run-of-the-mill circular pots and tubs, there are modern and ultra-modern forms such as square, rectangular, triangular, hexagonal, and octagonal. Also eligible are old iron kitchen pots, kettles, pails, jugs, casks, vases, crocks, jam tubs, barrels and nail kegs, Japanese fish tubs, aged sinks, bathtubs, bamboo soy tubs. There are novelty containers such as driftwood, wheelbarrows, donkey carts, spinning wheels and boxes attached to a roadside mail container. There are also bird cages, decorative well heads, animal figures, and Strawberry jars. Woven baskets may be used to conceal unattractive containers. Even tar paper pots, handled by garden centers and florists are worthy if painted or veiled to upgrade their exterior. Any of these can be used in your container gardening ideas.
Where to find your container supplies? Begin with what you possess. If you explore cellars or basements, attics, garages, and sheds, you will doubtless encounter objects of interest. Old-fashioned pots and kettles, usually sold in antique shops at rural auctions or observed at old New England inns, have much attraction.
Different container garden ideas to ponder are old cookie and bean jars, pickle and other types of crocks, wash tubs, coal pails, jardinières, and ceramic bowls. For drainage, scatter a thick layer of substantial pebbles or shattered pieces of pots or bricks at the bottom and then moisten plants with care. In substantial containers, drainage material should be many inches thick. Where rainfall is hefty, be certain to keep garden containers without drainage outlets on porches, below awnings or the under sizable eaves of house. With pails and old galvanized wash tubs, holes can be easily punctured at the bottom.
Plants in containers without drainage openings stay wet longer. Some of these—crocks, jardinières and cookie jars—are massive enough to be secure against the elements in exterior container gardening.
What constitutes the perfect container for your container garden ideas? A container needs to be attractive, even if it is not an object of art. It should be sturdy and lasting and able to resist all kinds of weather. This is especially true of the substantial sizes which ofttimes continue outdoors all year around. In the North, alternate icy and thawing is a predicament in winter (and could generate cracking); in blazing climates, intensive heat, humidity, and moisture are to be considered (and could cause fading). And in semiarid areas, there is the impact of searing sun to keep your attention, another source of fading. All these things need be kept in mind when coming up with your container gardening design.
The perfect container must be vast enough to hold a sizeable quantity of soil. It should have super drainage facilities through holes or various openings at the bottom or sides. It must not rust, at least in a single season, and it should have a wide enough base to perch firmly wherever placed. Further, it needs to be heavy enough to withstand average winds. In severe storms, like hurricanes and tornadoes, movable containers can be shifted to interim safety. All of these things should be factored in when you are coming up with your container gardening ideas.
Resistance to rot is another requisite. Wooden containers—except those made of rot-resistant Redwood, Western Cedar, and Southern Red Cypress—will require treatment with a wood preservative. Except for lifelong containers, the capability to move your container garden is another quality, and sometimes a safety precaution, of portable container gardening. Sizable boxes and planters can be equipped with wheels, and garden centers have redwood tubs that perch on platforms with wheels. An opening in the platform corresponds to the hole in the tub. Sizeable containers without wheels can be pushed on iron or wooden rollers by two or more people; however, if you live in an area inclined to severe storms it is best to keep your containers small-scaled.
Smaller containers are ideal for cultivating herb container gardens. If you plan to plant an herb container garden be imaginative. Here are some container garden ideas for herbs that go great together.
* For an Italian selection try Sweet Basil, Italian Parsley, Oregano, Marjoram and Thyme.
* For a pleasing scented container use Lavender, Rose Scented Geranium, Lemon Balm, Lemon Thyme, and Pineapple Sage.
* For utterly extravagant salads try Garlic Chives, Rocket, Salad Burnet, Parsley, Celery.
* And to say “We love French Cooking!” use Tarragon, Chervil, Parsley, Chives and Sage.
Any of these will liven up your meal and please your family.
So these are just a few container gardening ideas. Get out a pad of paper and make up a container garden plot that will add to the view and conceivably even the palate.

They’re an old stand-by from the 70s, and they’re making a huge comeback. Crock pots, also known as slow cookers, are one of the handiest tools for a busy working woman - or man, for that matter. With a crock pot, you can spend ten minutes of prep time before you leave for work in the morning, flip it on, and return home in the evening to a fully cooked meal - nutritious, delicious and far less expensive than takeout.
I grew up with a crock pot in the house, but it was seldom used. My grandmother was home full time, and it was far more common for her to slow cook on top of the stove. When I moved out on my own, those delicious slow-simmered dishes that were a staple of my diet were out of reach. I didn’t have time to stay at home and stir the pot. I turned to convenience meals and microwave cookery, but I missed the wonderful meals I grew up with - coq au van, slow simmered spaghetti sauce, beef stew, stewed chicken and baked beans.
That all changed when I discovered a recipe for ‘Mom’s Busy Day Chicken’ in a recipe book offered by, of all places, the La Lecher League. The recipe was incredibly simple - just put one cut up chicken in a crock pot, add two cans of stewed tomatoes and an onion, and flip the crock pot to low, and then walk away for six to eight hours. I was skeptical, but I tried it - and the results quickly became a family favorite. The chicken was tender enough to fall off the bone, and flavored through and through with spices and tomato sauce. The sauce was thickened and perfect for spooning over rice or pasta and best of all, it was nutritious and healthy.
Why is crock pot cooking so great?
1. You don’t have to watch the pot.
They say a watched pot never boils - neither does a crock pot. When you set the crock pot’s temperature to low, you can be sure that the food inside will cook at temperatures low enough to avoid overcooking, and high enough to prevent the formation of harmful bacteria.
2. Ten minutes in the morning makes a home-cooked meal in the evening.
Prep time for crock pot cooking is almost none. Cut up your ingredients, add them to the pot, cover it and walk away. The most elaborate recipes may require that you cut things uniformly or that you layer ingredients in a particular order, but all it takes is a few minutes in the morning, and you’ll come home to a home-cooked meal at the end of the day.
3. Cleanup is quick and easy!
Crock pots used to be a real hassle to clean, but no more. Today’s crock pots feature removable liners so washing the pot is as simple as washing a dish. Just lift out the liner and wash. If you have a slow cooker tucked away somewhere, pull it out and give it a try. You’ll find dozens of recipes that break the traditional “mushy” meals syndrome that has given crock pots a bad name. Test a few, and you’ll find yourself upgrading to a new family friendly model so you can treat your family to wonderful, tasty, home cooked meals with almost no effort.

In fact if you were walk into any restaurant in the French Quarter of New Orleans, back in the kitchen they will have someone who carries the title of “pot cook”. This will be the chef thats responsible for anything that is slow cooked in a pot and there is a veritable cornucopia of dishes prepared this way down there.
The one thing that too many crock pot cooks fail to do, is to prepare a rue to base their stew off of. This is done by pouring about a half a cup of veritable oil into a pan and than adding about a half a cup of plain white flour to it. Carefully stir the rue on light heat until it’s a nice dark golden brown but “not burnt”.
A nicely prepared rue is why so many of the simpler crock pot recipes such as leek & potato stew that you will find in the south will leave you wanting to lick your plate. Now making a perfect rue does take a little practice, so if your’s has burnt taste when it’s done then toss it out. A rue should have a nice nutty flavor.
If beans aren’t your cup of tea then you haven’t tried beans the way they’re cooked in Southern Louisiana. They take beans serriously down there and the finished pruduct reflects this well. You’re going to have to cook your beans all day in a crock pot until they are the consistency of a gravy. Also don’t forget to toss in some bacon or pork fat.

Slow Cooker Recipes: Part 1

This article is the first in a series that features some of my favorite slow cooker recipes. I hope you enjoy them and continue to read the series!
BBQ Pork Sandwiches
Ingredients:
1 (14-oz) can beef broth
3 lbs boneless pork ribs
1 (18-oz) bottle barbeque sauce
Burger buns or rolls (makes about 12 sandwiches)
Directions:
Pour the broth into the slow cooker, then add the pork ribs. Set the cooker to a high heat, cover, and cook for four hours (or until the meat shreds easily with a fork).Remove the meat from the cooker and shred it. Transfer the shredded meat to a Dutch oven and add the barbeque sauce. Stir well, then bake at 350 degrees F for about half an hour. Spread the barbeque pork meat onto one of the bread halves, sprinkle a bit of pepper on it, then cover with remaining bread half.
Taco Soup
Ingredients:
3 whole skinless, boneless chicken breasts
1 onion, chopped
1 can chili beans
1 can black beans
1 can whole kernel corn, drained
1 (8-oz) can tomato sauce
1 (12-oz) can or bottle beer
2 cans diced tomatoes with green chilies, undrained
1 package taco seasoning
shredded Cheddar cheese
sour cream
crushed tortilla chips
Directions:
Combine the chili beans, black beans, corn, beer, onion, tomato sauce, and diced tomatoes in the slow cooker. Add the taco seasoning and stir well. Place the chicken breasts on top of the mixture and spoon a little of the mixture on top. Set the slow cooker to a low heat and allow it to cook for five hours. Remove the chicken from the soup and shred with a fork. Return the shredded chicken into the soup and cook for another two hours. Serve with shredded cheese, sour cream, and crushed tortilla chips.
Pot Roast
Ingredients:
5 1/2 lb pot roast
2 cans condensed cream of mushroom soup
1 (1-oz) package dry onion soup mix
1 1/4 cups water
Directions:
Add the cream of mushroom soup, water, and dry onion soup mix into the slow cooker. Add the pot roast and ladle the soup mixture over the roast. Set to a high heat and cook for about four hours. If you want a more flavourful roast, cook on a low setting for eight hours. Serve with a ladle of soup mixture and veggies of your choice.
Chicken and Dumplings
Ingredients:
4 skinless, boneless chicken breast halves
2 tbsp butter
2 cans condensed cream of chicken soup
1 onion, finely diced
2 packages refrigerated biscuit dough
Directions:
Put the soup, butter, onion, and chicken into the slow cooker. Top up with water until the chicken is covered. Cover the slow cooker and set to a high heat setting. Cook for about five hours. Half an hour before serving, place the biscuits in the slow cooker. Ensure the dough is thoroughly cooked before serving.
